What next?

In just over a month, David will graduate and we will both be completely done with school. Finem. La fin. Das ende. Since the day we met – over ten years ago – one of us has always been in school. First, our undergraduate degrees. Then my graduate degree. Then his graduate degree. Now that it is coming to an end, I can’t help but think . . . what next?

It will be so strange living a life that does not revolve around the academic calendar. There will no longer be finals periods, marked by stress-filled silences and piles of takeout containers. No more summer vacations and excuses to take two and half weeks off at Christmas.

It is both exciting and terrifying at the same time. Despite the fact that we will both be entering professional careers, I know we will have more freedom. Maybe we will go out more. Perhaps we will pick up some of our forgotten hobbies like Saturday morning basketball and mini golf. Maybe we will even replace our primitive pitas and tzatziki nights with the real deal, balancing our chairs on cobblestones at outdoor restaurants in Athens. I’ve always wanted to go back and David has never been. Maybe we will finally get to show each other some of our favorite places in the world, state-side, foreign, and in our own backyard.

What next?

5 Minute Tzatziki

I could eat tzatziki on everything. Gyros, grilled meat, greek salad, or spread on warm pitas with whatever remnants of the fridge sound good. (Yesterday, it was roasted garlic, kalamata olives, and cool cucumbers.) This tzatziki recipe is super easy–five minutes and you have yourself the best kind of sauce. I hope you enjoy!

Ingredients

  • 5.3 ounces plain, non-fat greek yogurt
  • 3 1/2 Tablespoons minced cucumber
  • 1 1/2 teaspoons lemon juice
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried dill

Instructions

  1. Stir together all ingredients! Serve on gyros, pitas, greek salad, grilled meat, and more!

    This is nearly exactly how I make it. I use fresh dill and garlic and squeeze the juice from the cucumbers, but ya, 5 minute Tzatziki. And it tastes better than the store bought stuff. There's recipes out there that range from 35 minutes to 24 hrs. Personally myself, this 5 minute recipe is superior to many of the longer and exhausting recipes out there. It splashes with flavour.

      Hi Sharon! That is totally up to you! I prefer to peel the cucumber, because I'm not a fan of cucumber skin. But the taste won't change if you leave it on!

    One of my favourite things in the world is a simple grilled chicken seasoned only with salt, pepper and smoke up against a good dollop of tzatziki. I especially like the idea of using garlic powder as I often find I go overboard on the fresh garlic. Seems like that would just smooth everything out. Great idea. Thanks! It will be grilling season here shortly. Can't wait to try this out.
